This dish will hit the spot in terms of all your roast cravings. It looks incredibly traditional, with cauliflower at the centre as opposed to a turkey. What you’ll need is a medium whole cauliflower head with the leaves and hard stem removed, vegan mayonnaise, yeast flakes, onion powder, garlic powder, thyme, salt, vegan gravy, fresh sprigs of rosemary, potatoes and carrots.
First, mix the mayonnaise and dry seasonings to form a paste before smothering it all over the cauliflower in a bowl. Then, transfer it to a casserole dish. Add the carrots and potatoes to the bowl with the remaining paste mixture before adding them to the dish with the cauliflower. Cover the dish with parchment paper and foil and bake for an hour. Prepare the vegan gravy while this cooks. Remove the cover after an hour and reduce the oven temperature and bake for twenty additional minutes or until vegetables are golden brown. Garnish with rosemary sprigs and smoother in gravy before serving.

2. Vegan Stuffing
One of the best aspects of Christmas dinner is passing the big stuffing dish around the table. The taste and smell of it are significant to the festive period and it’s many people’s favourite part of the meal. Vegan stuffing can be just as tasty, if not more. You will need onion, garlic, carrot, celery, herbs and bread. You can also add cranberries and raisins, diced apple, chopped mushrooms or chopped walnuts and pecans for a more specific taste.
To start, you’ll need to dry the bread by either toasting it or leaving it out overnight. Sauté the vegetables over medium heat before adding herbs in 7-8 minutes later. Next, add the bread to a bowl before adding the vegetables. Add one cup of vegetable broth and mix before slowing adding more. Finally, bake the stuffing after covering it with foil. Leave it in for 30 minutes and remove the foil afterwards. Bake for another 10-15 minutes until done.

3. Vegan Gravy
Smothering your meal with gravy is essential any time of the year, not just at Christmas. This vegan gravy requires olive oil, onions, garlic, mushrooms, tamari, water, potatoes, salt and pepper. To begin, combine the oil and onions in a deep skillet and sauté until soft. Then, add mushrooms, garlic and tamari. Stir before adding water and potatoes. Cover and let it cook until tender. After this, place the mixture into a blender and add salt and pepper. Blend until smooth and voila!
